Cherry Pie
In addition to being Great American Pie Month, February is also National Cherry Month. This homemade cherry pie is sure to be a hit for any occasion.
Time Needed: 1 hour and 30 minutes
Serves: 8 slices (1 whole pie)
Ingredients:
- 4 cups of frozen or fresh cherries
- 1 to 1 1/2 cups of granular sugar
- 4 tbsp. of cornstarch
- 1/8 tbsp. of almond extract (optional)
- Pie dough to make a 2 crust pie
- 1 1/2 tbsp. of butter, to dot
- 1 tbsp. of granulated sugar, to sprinkle
Instructions:
- Place the cherries in a medium saucepan and place over heat. Cover.
- Once the cherries start to release juice, remove from heat.
- In a small bowl, mix the sugar and cornstarch together. If you are using almond extract in this recipe, add it at this time.
- Return the mixture to the stove. Cook over low heat until thickened, stirring frequently.
- Remove from heat and let cool. If your filling is too thin, you can add more cornstarch.
- Preheat oven to 375 degrees.
- Prepare your pie dough. Divide in half.
- Roll out each piece to fit an 8 or 9-inch pan. Place one piece in the pan to form the bottom crust.
- Pour the cherry mixture into the crust. Dot with butter.
- Moisten edge of bottom crust.
- Place the top crust on and flute (pattern) the edge of the pie.
- Make a slit in the middle of the crust for steam to escape. Sprinkle the top of pie with sugar.
- Bake for 50 minutes. Once baked, remove pie from oven and place on a rack to cool.
Apple Pie
This apple pie is simple to make and uses ingredients you might already have in your pantry or cupboard.
Time Needed: 2 hours and 20 minutes
Serves: 8 slices (1 whole pie)
Ingredients:
- Double-crust pastry
- 1/3 to 1/2 cup of sugar
- 1/4 cup of all-purpose flour
- 1/2 tsp. of ground cinnamon
- 1/2 tsp. of ground nutmeg
- 1/8 tsp. of salt
- 8 cups of thinly sliced, peeled tart apples (8 medium)
- 2 tbsp. of butter or margarine
Instructions:
- Heat oven to 425 degrees Fahrenheit.
- Mix sugar, flour, cinnamon, nutmeg, and salt in a large bowl. Stir in apples. Turn into pastry-lined pie plate. Dot with butter. Trim the overhanging edge of pastry 1/2 inch from the rim of the plate.
- Roll another round of pastry. Fold pastry into fourths and cut slits so steam can escape.
- Unfold top pastry over filling; trim overhanging edge 1 inch from the rim of the plate.
- Fold and roll top edge under lower edge, pressing on the rim of the seal. Flute as desired.
- Cover edge with 3-inch strip of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking.
- Bake pie for 40 to 50 minutes or until crust is brown and juice begins to bubble through the crust.
Strawberry Pie
Celebrate the beginning of strawberry season in warmer climates with this pie. For the best results, try purchasing the strawberries a day or two before you make the pie.
Time Needed: 40 minutes
Serves: 6 to 8 slices
Ingredients:
- 1 cup of sugar
- 1 1/4 cup of water
- 2 tbsp. of cornstarch
- 1/4 cup of strawberry gelatin powder
- 4 cups of fresh strawberries, halved
- 9-inch baked pie crust
- Whipped cream (optional)
Instructions:
- In a small saucepan, bring sugar, water, and cornstarch to a boil over medium heat.
- Cook and stir constantly for 1 minute or until thickened.
- Stir in strawberry gelatin until dissolved.
- Remove from heat, chill for 2 hours.
- Arrange strawberries in a pastry shell. Pour gelatin mixture over.
- Cover and chill for 2 to 4 hours before serving. You can add whipped cream if you like right before you serve.
Key Lime Pie
This pie features a graham cracker crust, giving it a decadent and rich texture.
Time Needed: 1 hour and 30 minutes
Serves: 8 slices
Ingredients:
Graham Cracker Crust
- 1 1/4 cup of graham cracker crumbs
- 3 tbsp. of sugar
- 5 tbsp. of unsalted butter, melted
Filling
- 14-oz. can of sweetened condensed milk
- 4 large egg yolks
- Zest of 1 large lime
- 1/2 cup of lime juice (five limes)
Instructions:
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, stir the graham cracker crumbs, sugar, and melted butter with a fork. Mix until graham cracker crumbs are moist. Press mixture into a 9-inch pie plate or dish. Pat down the bottom and the sides. Bake for 12 minutes or until golden brown.
- While the crust is baking, prepare filling. In a medium bowl, whisk together the sweetened condensed milk and egg yolks. Whisk until well combined.
- Add the lime zest, and lime juice. Whisk well and set mixture aside. It will thicken up as it sits.
- When the pie crust cools to room temperature, pour the lime filling over the pie crust. Bake for 15-17 minutes.
- Remove pie from oven and cool on a cooling rack. Once cool, place the pie in the refrigerator. Chill for at least one hour before serving.
